Inchi Thairu - Ginger with Curd

This is a very simple to make curry that will go very well with rice. This is also referred to as the 'Amruth' among vegetable curries.
Like last Holi, this time also our friends visited our home and surprised us by throwing colors. We got very excited and promised them a decent lunch. I made rice, inchi thairu, brinjal fries, fish fry and papad for them. I made all of them in a hurry and it helped me to realize that inchi thairu is a great curry which can be made quickly. Find out the recipe:
Inchi Thairu - Ginger with Curd

Ingredients

1. Ginger - 3 Tbsp finely sliced
2. Curd - 1 cup
3. Grated Coconut - 1/2cup
4. Black Pepper powder - 1 tsp
5. Coriander powder - 1/2 tsp
6.a pinch of Salt
7. Fenu Greek Seeds powder - a pinch
8. Dried Red Chilli - 2 or 3
9. Curry Leaves
10. Cooking Oil
11, Mustard Seeds

How to Make?

1. Blend grated coconut and ginger in a mixer with enough water and salt.
2. Transfer the above mix to a cooking vessel and heat it in a low flame.
3. Add items 4, 5 and 7 and allow it to get boiled.
4. Now, add curd (this should be already mixed well with enough water and salt).
5. Once the curd is added , remove the vessel from the flame within one minute.
6. In a separate vessel, heat cooking oil and add mustard seeds, curry leaves and dried red chilli.
7. Now pour that into the item referred in step # 5.

Your Inchi Thairu curry is ready. You can team it with rice and a fish fry!!!

I have updated the post. My older posts do not have any quantity mentioned :(. In the process of updating them. Thanks for stopping by. Try to make a bit thicker consistency. This will go well with rice and add fish fry and thoran as accompaniments :)
