Cheera Thoran - Spinach Stir Fry

Yay!!! Spinach .. one of my favorite  I love the red one the most, however this time we got the more popular green one. Cheera thoran is a very nutritious vegetable dish, which goes well with rice, hence one of the common dishes made at home.

Ingredients

1. Spinach.. duh!
2. Grated coconut
3. Garlic
4. Green Chilli - 1
5. Turmeric Powder
6. Cumin Seeds
7. Red Chilli Powder
8. Oil
9. Dry red chilli.
10. Curry Leaves.
11. Mustard seeds.

How to Make?

1. Make a paste of ingredients listed from 2 -.7.This will give teh Masala.
2. Now heat the pan / kadai and heat oil and add dry red chillies, curry leaves and mustard and let it splatter.
3. Now pour the paste from Step #1 into the vessel and let it boil, Then add salt to taste.
4. Then add spinach( should be finely cut) slowly and turn slowly so that the masala is spread evenly.
5. Do not add anymore water and let it get cooked for about 2-3 minutes.

Spinach is added at the end since cooking time needed for it is less and cooking for longer time will deplete all nutrients. Water is added only while making the paste in step #1, water content in spinach is more than enough for it to get cooked.  The total volume of Spinach will come down to half once it is cooked.
