This is the first thing I tried my hands on after my wedding. However, it was a major disaster :( Then I simply didn't try to make it for a very long time. And, one fine day I had this strange craving for Appams and started to try it again. Over last few weeks , I am now able to make decent Appams and feel very confident to share it with you all :)
Ingredients
1. Rice Powder- I usually use Nirapara/Melam. You can also make it at home.
2. Sugar - 2-3 tea spoons
3. Salt - 1 tea spoon
4. Old cooked rice.
5. Coconut Grated
6. Cold Water
7. Yeast.
How to Make ?
Batter
1. Grind old cooked rice and grated coconut to a smooth paste and keep it aside.
2. In a mixer, take the rice batter, sugar, salt and cold water and mix it for a minute to even consistency.
3. Now add the paste from step #1 into the rice mix from step #2 and mix it together for a minute. This is to ensure same consistency.
4. Add yeast to the above mixture and keep it over night, so it ferments and rises.
Cooking
1. Heat a pan with a thick bottom.
2. Pour the Appam batter into it and swirl the pan, so that the batter takes the shape of the pan and spread evenly.
3. Close the lid and cook.
4. Once the sides of the Appam turns golden brown and crispy, you can take it out. It is ready!
Pair it with Vegetable stew / Spicy potato curry/ chicken/meat curries.
