Fish curry is a staple food at my parent's home. Mom prepares each fish in different style and some with mango, some with tomato or drumstick and some with coconut ,etc; However my favorite version is the one with coconut(thenga) and tamarind. Let's see how to make a lovely mackerel fish curry in Kerala style.
Ingredients
1. Mackerel Fish
2. Grated coconut.
3. Peeled shallots.
4. Cumin seeds.
5. Tamarind
6. Curry leaves
7. Red Chilly powder.
8. Turmeric powder.
9. Green chilies
10.Ginger (optional)
How to Make?
1. Mix fish cubes, salt, turmeric powder and red chilly powder and keep aside for about 20 minutes.
2. Take tamarind and soak it in water for some 10 minutes.After that extract tamarind juice .
3. Finely slice shallots, tomato and green chillies.
4. Make a paste of grated coconut , cumin seeds.
5. Now cook the ingredients from step#3, along with tamarind juice and curry leaves. Close the pan and cook it in low heat for 5 minutes. This is to ensure that tomato and shallots are cooked well.
6. Now, add the fish cubes and coconut paste gently into the pan and mix it well, so that it is all even..
7. Wait till curry reaches boiling point, this would happen in couple of minutes.
8. Now, close the lid and let the curry simmer for another 10 minutes.
9. Once done, add more curry leaves.
The curry is ready :) Some options are to add sliced ginger while cooking shallot,tomato mix and to fry fish before adding to the curry.
