Beetroot is a very attractive vegetable and also very healthy, however I am not a great fan as it is very sweet. Even though I a make it a point to cook it at least every alternate weekend and teams it up with my favorite curries, so that I do not miss out on nutrition.
Ingredients
- Beetroot - Shredded
- Grated Coconut
- Garlic
- Green Chilly
- Turmeric Powder
- Red Chilly Powder
- Cumin Seeds
- Dried Red Chilly
- Curry Leaves
- Mustard
- Cooking Oil
How to Make?
- Make a paste of grated coconut, garlic, green chilly, turmeric powder, red chilly powder and cumin seeds.
- Heat a pan and add couple of drops of oil.
- Add mustard seeds, then dried chilly to the oil and when the seeds splatter, add curry leaves.
- To this add the paste from step # 1 and add salt. Let it get cooked very well.
- Now add beetroot, mix it well with Masala. Saute it till it gets cooked, however do not overcook as beetroot will lose the nutrition.
- Serve this with hot rice.
