Mutta Choru - Egg Fried Rice

I am still in the hangover of making Malabar Chicken Biryani  :) , so today I decided to prepare a closer version of it  that is  chicken fried rice. On second checking of the ingredients, found that chicken pieces are almost over. That's when I thought of making an Egg fried rice and then accompanying it with chicken fries.  So let's see the recipe.


Ingredients
  1. Basmati Rice
  2. Sesame Oil
  3. Salt
  4. Carrot - Finely sliced.
  5. French Beans- Finely sliced.
  6. Eggs
  7. Carrot- Finely sliced.
  8. Big Onion- Finely sliced.
  9. Garlic
  10. Ginger
  11. Soy Sauce/ Chilly Tomato Sauce
  12. Black pepper powder
  13. Green Chilly - Finely sliced.
How to Make ?

1. Cook rice with double the amount of water and salt to taste. Once done, keep it in a tray to cool down. This is to ensure that rice will not stick together.
2. Mix eggs with pepper powder and splash it on to a pan and scramble well enough, till you get all the egg pieces of similar size . Continue to do so till it is cooked.
3. Take a Kadai/Wok and add sesame oil. Now add onion, ginger, garlic and green chilly. Saute it continuously so that it is cooked well. Now add rest of the vegetables and continue to saute till all is cooked.
4. Add soy sauce / chilly tomato sauce and the rice. Saute well and add scrambled egg to this.
