For the last couple of days I have been toying the idea of venturing into the area of food beyond Kerala :) So decided to make an easy(seemingly) non-Kerala dish - Dhokla. I have had this many times at my office cafe and it was an instant addiction. You may find authentic Dhokla recipes at many places in web, however this is like a journal of my first trial :)

- Besan/Gram flour - 200 g approx
- Curd - 4 Tbsp
- Water - half cup
- Green Chilly - 4 (Paste)
- Lemon Juice - 1 tsp
- Salt to Taste
- Sugar - 1 Tbsp
- Turmeric Powder - half Tbsp
- Oil - 1 Tbsp
- Eno Fruit Salt - 1 tsp
Seasoning
- Oil - 1 Tbsp
- Mustard Seeds
- Curry Leaves
- Coriander
How to Make?
- Mix Curd and Water and beat it to a smooth consistency
- Now add, Besan to this and continue to beat.
- Let this sit for an hour
- Now add, turmeric, lemon juice, salt, sugar and green chilly paste.
- Take the utensil where you are planning to pour the mixture and smear it with oil.
- Now add Eno to the batter mix and as soon as bubble form, transfer immediately to the utensil.
- Place this utensil into a pressure cooker, then close it and simmer for 20 minutes. Do not put whistle.
- Switch off the cooker once done and then allow it to come to room temperature.
- Let's season it now, for that heat oil and splutter mustard seeds and add curry leaves.
- Pour seasoning to the Dhokla.
- Then, add finely chopped fresh coriander leaves.
- Cut this into desired shapes.
Enjoy with Mint Chutney!
